About this recipe: This Madeira cake is easy to make, delicious and they will all be coming back for more! No-fuss Madeira cake with traditional ingredients - butter, flour, sugar, eggs, flour and a hint of lemon.

  • 240g softened unsalted butter
  • 200g caster sugar, plus extra for sprinking
  • grated zest and juice of 1 lemon
  • 3 large eggs
  • 210g self-raising flour
  • 90g plain flour

Prep:15min  ›  Cook:1hr  ›  Extra time:20min cooling  ›  Ready in:1hr35min 

  1. Preheat oven at 170 C / Gas 3. Butter a loaf tin.
  2. Cream the butter and sugar, and add lemon zest.
  3. Add eggs one at a time with a tablespoon of flour with each, then mix in all the remaining flour, then finally add lemon juice.
  4. Sprinkle with caster sugar just before it goes in the oven.
  5. Bake for 1 hour or until cake tester comes out clean.
  6. Let to cool in the tin before turning out onto wire rack.

This is my first attempt at a Madeira cake and I am delighted with this nice easy recipe. The cake rose well, it cracked along the top which was great and the lemon in the cake made the house smell wonderful. Next time I make it (and there will be a next time) I will look at it around the 30-35 minute mark and cover it with a little foil so that the top doesn't go too tanned. - 07 Aug 2015
