100ml (4 fl oz) balsamic vinegar
225ml (8 fl oz) orange juice
225ml (8 fl oz) pineapple juice
4 tablespoons olive oil
1 dessertspoon freshly ground black pepper
1 clove garlic, minced
3 spring onions, finely chopped
dried crushed chillies or Tabasco Sauce to taste

In a medium bowl, blend the vinegar, orange juice, pineapple juice, olive oil, pepper, garlic, spring onion and chillies.
Place meat or fish in a shallow glass dish or bowl, pierce with a fork a few times, and pour 1/2 of the marinade over it. Turn over and repeat. Marinate for at least 1 hour, up to 24 hours for best flavour.
