Sweet and spicy marinade

    This versatile marinade works well for any meat or fish.

    Serves: 8 

    • 100ml (4 fl oz) balsamic vinegar
    • 225ml (8 fl oz) orange juice
    • 225ml (8 fl oz) pineapple juice
    • 4 tablespoons olive oil
    • 1 dessertspoon freshly ground black pepper
    • 1 clove garlic, minced
    • 3 spring onions, finely chopped
    • dried crushed chillies or Tabasco Sauce to taste

    1. In a medium bowl, blend the vinegar, orange juice, pineapple juice, olive oil, pepper, garlic, spring onion and chillies.
    2. Place meat or fish in a shallow glass dish or bowl, pierce with a fork a few times, and pour 1/2 of the marinade over it. Turn over and repeat. Marinate for at least 1 hour, up to 24 hours for best flavour.
