Chicken in Parmesan Breadcrumbs

    This is simple and very tasty as well as being quick and easy. Chicken breasts are coated in a mixture of breadcrumbs, flour and grated Parmesan cheese, then pan fried. Tip: If you pound the chicken breasts to an even thickness before frying, they'll cook more evenly.

    Serves: 4 

    • 4 tablespoons breadcrumbs
    • 4 tablespoons plain flour
    • 4 to 5 tablespoons finely grated Parmesan cheese
    • 4 skinless chicken breast fillets
    • 2 eggs, beaten
    • oil, for frying

    1. Mix breadcrumbs, flour and grated cheese together in a shallow bowl.
    2. Dip the chciken breasts into the beaten eggs, then into the breadcrumb and cheese mixture. Coat thoroughly on both sides.
    3. Heat oil in a large frying pan, over medium heat. Fry the breaded chicken until golden brown and cooked through.
