Pasta 'Green'

    30 min

This is a recipe for a basic, easy to prepare, pasta. It is eaten a lot by rowers who need many carbohydrates to regain their energy after a work-out. There is a light version for the light-weights and a more heavy version for the heavy-weights. This recipe is little time consuming and easy to make.

    Serves: 4

    • 500g Pasta: fusili, penne or farfalle
    • 250g spinach (frozen, creamy)
    • 500g chicken breast
    • 200g mushrooms, sliced
    • 2 onions, sliced
    • pepper
    • salt
    • olive oil
    • chilli sauce
    • 100g bacon (optional)
    • 80g cream cheese (optional)

    1. Cut the chicken breast into cubes. Season with salt and pepper (or other spices, if you like). Bake in a moderate oven with olive oil for 10-15 minutes.
    2. Bake in a moderate oven with olive oil for 10-15 minutes. When it is cooked, add the sliced onions and mushrooms.
    3. Put the frozen spinach in a pan and melt it slowly under low heat. Stir well! Also boil water for the pasta.
    4. By the time the water boils, put the pasta with some salt in it. When the pasta has been cooked, drain it well.
    5. Stir the spinach through the pasta. Then add chicken, onions and mushrooms.
    6. Serve the chilli sauce next to the pasta. Use it to spice up the pasta to your taste.

Whenever you want to use fresh spinach you can pour cream or cream cheese to the pasta to make sure you get the ‘creamy’ sauce.

For the heavy weight version, bake the bacon along with the chicken. Put the cream cheese in the end in the sauce.

You can add some garlic as well.
