About this recipe: Simply serve with warm bread for a very quick and simple, but delicious supper. Just 5 ingredients - couldn't be simpler!

Serves: 2 

  • 1 onion
  • 2 medium sweet potatoes
  • 1 (418g) creamed style corn
  • prawns or scallops (optional)
  • 1 pinch cayenne pepper
  • 1 tbsp milk or cream

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Gently saute the onion until soft and translucent.
  2. Peel and dice the potatoes. Toss with the onions for a few minutes, then add enough water to just cover the potatoes. Simmer for 15 minutes, or until potatoes are soft.
  3. Add in the can of creamed corn and simmer for further 5 minutes. Add in prawns or scallops if using. Season to taste with cayenne pepper.
  4. Just before serving, stir in the milk or cream.
