Jodie's chicken sandwich filler

    My children love this sandwich filler. It's very versatile, and if peppers are not liked, other veg can be substituted. Any cheese can be used.

    Serves: 4 

    • 2 to 3 cooked chicken breast fillets, finely diced
    • 1 red pepper, finely diced or sliced
    • 1 green pepper, finely diced or sliced
    • 1 onion, finely sliced
    • 1 large tomato, finely diced
    • 1/2 Mattesons smoked pork sausage, finely diced
    • 100g grated Cheddar cheese
    • 2 to 3 large tablespoons garlic mayonnaise

    1. Mix all ingredients together until well combined. Put into a bowl and cover with clingfilm. Put in the fridge to chill for up to an hour.

    Make ahead

    Can be made 1 to 2 days in advance and kept in the fridge.


    If you leave out the mayonnaise, you can use this mixture to make a pizza pie: spread tomato puree over bought puff pastry sheet, arrange ingredients on top and sprinkle with cheese. Bake in oven gas mark 7 for 20 to 25 minutes and you have a pizza pie.
