About this recipe: My children love this sandwich filler. It's very versatile, and if peppers are not liked, other veg can be substituted. Any cheese can be used.
Can be made 1 to 2 days in advance and kept in the fridge.
If you leave out the mayonnaise, you can use this mixture to make a pizza pie: spread tomato puree over bought puff pastry sheet, arrange ingredients on top and sprinkle with cheese. Bake in oven gas mark 7 for 20 to 25 minutes and you have a pizza pie.
