About this recipe: This is the easiest, squidgiest, most delicious chocolate cake ever ! I had this for my birthday cake but it would also be a wonderful dessert for a dinner party with a blob of creme fraiche. If baked for 25 minutes as suggested, the centre is quite fondant, ie. very soft. If you want it more cakey, just cook for another 5 minutes or so. It doesn't really need icing, but I've added a footnote with a suggested frosting recipe.

Serves: 8 

  • 200g 70% chocolate
  • 6 eggs
  • 300g sugar
  • 100g self raising flour
  • 180g butter or margarine

  1. Melt chocolate and then add the butter – stir until melted together.
  2. In another bowl, mix eggs and sugar, then add flour.
  3. Pour melted choc/butter in and mix until completely blended.
  4. Pour into a buttered/floured/lined (whichever method you prefer) cake tin. 20cm (8") or 23cm (9") tins would work well as you don't want the cake to be too deep.
  5. Bake for about 25 minutes (if you want it less “fondant” then bake for an extra 5 minutes).

Serving suggestion

Frosting: Melt 60g of dark chocolate. Add 2 tablespoons fresh cream. Add enough icing sugar to make it thick enough to ice with. Spoon over cake and let dribble down sides.
