About this recipe: A nut pie commonly baked for St Martin's Feast on 11th November, rich with hazelnuts, walnuts, dates, figs, sultanas and almonds.

Serves: 4 

  • 2 eggs, separated
  • 5 tablespoons caster sugar
  • 5 tablespoons plain flour
  • 2 tablespoons milk
  • 200g pitted dates
  • 100g chopped figs
  • 200g shelled hazelnuts
  • 200g shelled walnuts
  • 75g sultanas
  • 50g candied peel
  • 1 handful whole almonds to decorate

Prep:15min  ›  Cook:30min  ›  Extra time:10min cooling  ›  Ready in:55min 

  1. Preheat the oven to 180 C / Gas 4. Grease a 14cm square baking tin, sprinkle with flour and shake off any excess.
  2. With an electric whisk beat the egg-whites until they are fluffy. Then add the yolks, sugar, flour and milk.
  3. Combine them well and then fold in the dates, figs, nuts, sultanas and candied peel. Pour the mixture into the tin.
  4. Bake for 30 minutes. Place the almonds on top, arranged in a circle.
  5. Don't let the cake cool in the oven. Bring it out, leave it in the tin for 10 minutes until it has steamed off and then turn it onto a wire rack to cool.
