About this recipe: When you taste these slices you can hardly believe that these have no sugar added. The sweetness is derived from the dates and the figs which are also full of fibre and also a very good source of iron and calcium. To enhance the flavour of these slices, you can sprinkle 2 tablespoons of brandy or rum when you remove the cake from the oven.

Serves: 6 

  • 250g chopped dates
  • 200ml warm milk
  • 125g self-raising flour
  • 200g shelled walnuts
  • 100g chopped figs
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 1 orange, zested and juiced
  • 1 tablespoon flaked almonds

  1. Soak dates in warm milk for 1 hour.
  2. Preheat the oven to 180 C / Gas 4. Grease a 23cm tin (9 inch) with olive oil.
  3. Add all the other ingredients, except flaked almonds, to the date and milk mixture. Turn into the greased dish. Sprinkle the flaked almonds on top.
  4. Bake in the centre of the oven until golden in colour, 30-35 minutes.
  5. Place on a cooling rack and allow to cool before serving.
