Perfect fridge cake

    In the pursuit of the perfect fridge cake, my family spent much of my childhood tweaking this recipe until it was the perfect balance of fruity and biscuity!

    Makes: 32 squares

    • 200g butter
    • 250g milk chocolate
    • 4 tablespoons golden syrup
    • 500g digestive biscuits
    • 100g raisins
    • 100g glacĂ© cherries

    1. Over a low heat, melt the butter, chocolate, and syrup in a large pan.
    2. While that's melting, put the biscuits in a freezer bag and crush with a rolling pin until it's mostly fine crumbs. Leave some chunks for extra crunch!
    3. Stir the fruit into the chocolate mixture, and then add the crushed biscuits. If the mixture looks a bit sloppy or greasy, just add a few more (but not too much or it'll crumble!).
    4. Spread the mixture into a tin (I use two 18x18cm cake tins) then pop in the fridge for at least two hours until nicely set and chilled. Slice into squares, and enjoy!
