Swiss Chard Pasta Salad

    This is a light and simple pasta salad, perfect on a hot day.

    Serves: 4 

    • 100g (4 oz) fusilli pasta
    • 300g (11 oz) Swiss chard, stems removed and thinly sliced
    • 1 red pepper, seeded and chopped
    • 4 tablespoons shop-bought vinaigrette
    • freshly ground black pepper to taste

    1. Cook fusilli according to packet instructions. Drain, and rinse under cold water to cool.
    2. In a medium bowl, toss together the fusilli, Swiss chard and red pepper. Pour in dressing sparingly until you reach your desired amount. Season with black pepper to taste.

    My whole family liked this salad. We grew swiss chard in our garden this Summer and I was looking for ways to get my kids to enjoy eating it. This salad really fit the bill. The bright colors are a real bonus.  -  10 Jul 2005  (Review from Allrecipes US | Canada)


    Such a simple recipe! But I didn't have red I tried chopped up carrot. Not as colourful as red peppers, but nice and crunchy. My wife liked it and took all the leftovers to work in the morning.     I don't know if I didn't slice the chard thinly enough, but this salad was really work to eat. The chard was so tough that neither my husband or I finished our serving. I wouldn't make this one again.  -  20 Jul 2010  (Review from Allrecipes US | Canada)
