About this recipe: Extreme nibbles with a twist - breaded chilli chicken bites with a chocolate pepper vodka dipping sauce. Simple to prepare and will make a statement as well as a talking point.

Makes: 24 approx

  • golden breadcrumbs
  • chilli powder
  • dried oregano
  • smoked paprika
  • 4 chicken breasts, cut into bite size pieces
  • plain flour for dusting
  • 1 egg, beaten
  • 2 bars dark chocolate
  • 100ml pepper vodka
  • groundnut or vegetable oil as needed
  • 1 red chilli for garnish

  1. In a mixing bowl combine breadcrumbs, chilli powder, oregano and paprika to taste.
  2. Lightly dust the chicken pieces in flour. Dip into beaten egg and then press into the breadcrumbs mixture. Repeat with the remaining chicken pieces and place onto a plate. Cover and chill for 30 minutes.
  3. Meanwhile, melt the chocolate over a bowl of simmering water. When melted, add the vodka and mix well. Don't worry if the sauce splits slightly. Keep the sauce warm until serving.
  4. Heat a frying pan with enough oil to shallow fry and cook the chicken bites over medium heat until the chicken is no longer pink at the centre and the breadcrumbs are crunchy. You may need to cook in batches.
  5. Serve on a warmed serving platter with the sauce in the middle and toothpicks to use to dunk the chicken. Decorate the top of the sauce with a whole red chilli.
