Bella's super chewy granola bites

    These granola bars were basically invented by my sister. They are amazingly good. If you let them cool completely, then they are really chewy and don't crumble.

    Makes: 20 bites

    • 190g instant oatmeal
    • 65g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon vanilla extract
    • 113g butter, softened
    • 120ml honey
    • 73g dark brown soft sugar
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 40g chocolate chips
    • 40g raisins

    1. Preheat oven to 170 C / Gas 3. Pour a little vegetable oil into a cake tin. Rub it around the edges and the pan with kitchen paper.
    2. In a bowl, mix together oats, flour, bicarbonate of soda, vanilla, butter, honey, and sugar. Stir in the cinnamon and ginger.
    3. Add more honey, teaspoons at a time, as needed so the oatmeal mix is a little sticky, like a sticky Rice Krispie treat.
    4. Put the oatmeal mixture into the pan. Press firmly until it is layered evenly into the pan.
    5. Sprinkle the chocolate chips and raisins over the granola bar mix. Press them into the surface.
    6. Bake in the preheated oven until golden brown, 18 to 22 minutes. Let them cool on the counter for about 10 minutes.
    7. Cut the granola bar into bite size pieces, about 20. Let them cool for about 5 minutes more.
    8. Transfer the granola bars onto a plate to cool completely.
