About this recipe:A back-to-basics roast chicken recipe that is a staple in all Greek homes. Lemon, oregano, salt and pepper - and that's all you need for a gorgeous Greek roast chicken. There are variations to 'kotopoulo sto fourno', but this is the delicious bare-bones version that will become a family favourite.

Preheat oven to 190 C / Gas 5.
In a large bowl, whisk together the lemon juice, olive oil, oregano, salt and pepper. Add potatoes to bowl and coat thoroughly with mixture. Transfer the potatoes to a large roasting tin.
Place the chicken into the bowl with the remaining lemon juice mixture; coat thoroughly and transfer to roasting tin on top of potatoes. If any of the lemon juice mixture remains in the bowl, pour it over the chicken and potatoes.
Bake uncovered until potatoes are done and the chicken's juices run clear, approximately 60 to 90 minutes. Check every 30 minutes while roasting, and add a bit of hot water if you find the potatoes are drying out.

i didn't have a whole chicken, so i used three huge chicken quarters. i just wanted to make the chicken, so i left out the potatoes. will make it again with a whole chicken and the potatoes, cuz it was THAT GOOD! i used greek seasoning instead of the oregano. i lifted the skin and poured in the mixture, and poured the rest over top of the chicken skin. this was very flavourful and was a big hit. we enjoyed it very much - 02 Jun 2015
I made this exactly as directed except for using Well Seasoned Greek Seasoning instead of the oregano and not peeling the potatoes. Very tasty! Unfortunately my (sometimes fussy) daughter found the chicken too lemony, but my son liked it. - 28 May 2015
I was really impressed with this recipe. It was easy to make with clear instructions. I did substitute Well Seasoned Greek Seasoning from the Missing Ingredient, a Canadian online food shop for the oregano. Everyone thought it was delicious! I will be adding this to my saved recipes! - 25 May 2015
