Butter icing crunch

    This is a very tasty sweet treat that's perfect for all ages! I serve it in empty yogurt pots.

    Makes: 5 large empty youghurt pots.

    • 250g unsalted butter
    • 250g icing sugar
    • 5 digestive buistcuts (1 for each pot)

    Prep:5min  ›  Extra time:10min chilling  ›  Ready in:15min 

    1. Put the digestive biscuits in a bowl and add 25g of butter. Use a fork to smash up the biscuits and butter until it all comes together. Evenly spoon the biscuit crumbs into 5 youghurt pots.
    2. Put the rest of the butter into a bowl and add the icing sugar. Mix with a fork mix until a yellow creamy mixture forms.
    3. Spoon even amounts of the mixture into the youghurt pots on top of the biscuits.
    4. Leave in the fridge for about 10 minutes. Then serve and enjoy!

    Other ideas

    You could add cocoa powder to the butter and icing sugar mixture to make Chocolate Butter Icing Crunch!
