Carly's cottage pie

    I devised this recipe for my daughter and used sweet potatoes in the topping to get her to eat more veg. She loves it, so I'm happy!

    Serves: 4 

    • 500g lean minced steak
    • 1 medium onion, chopped
    • 2 teaspoons olive oil
    • 250g swede and carrot
    • 1 teaspoon tomato puree
    • 300ml beef stock made with 1/2 stock cube
    • 1 bay leaf
    • 1 tablespoon chopped fresh parsley
    • 500g King Edwards potatoes, peeled and chopped
    • 500g sweet potatoes, peeled and chopped
    • 30ml milk
    • 1 tablespoon butter

    1. Preheat the oven to 200 C / Gas 6.
    2. Gently fry the steak and onions in olive oil until the steak browns. Add the swede and carrot, tomato puree, stock, bay leaf and parsley. Simmer for 20 minutes.
    3. Whilst the steak mince is cooking, put the King Edwards and the sweet potatoes in a pan and cook until tender. Drain well.
    4. Mash the potatoes with the milk and butter. Put the mince mixture in a deep pie dish and top with the potatoes.
    5. Bake in the oven until the top is brown and crisp, 35 to 40 minutes. Enjoy.
