About this recipe: This is so easy to make, and something special to serve with bread at a dinner party. Butter is combined with dried lavender and fresh herbs. For a fancy presentation, you could set the butter in moulds.

  • 150g salted butter
  • 2 teaspoons dried lavender buds
  • 2 teaspoons finely chopped fresh chives
  • 2 teaspoons finely chopped fresh parsley

  1. Allow the butter to come to room temperature (don't microwave, as it won't re-set as nicely if it melts).
  2. Take the lavender buds and give them a quick blitz in a blender, spice grinder or food processor, so that they turn into a coarse powder.
  3. Combine the lavender, herbs and butter. Season with additional salt, if desired. Beat until well blended. Cover and store in the fridge till using.


Lavender buds can be found in larger supermarkets or online. Barts is a popular brand.
