    The Royal wedding is just a few days away, so make sure to stock up on some finer things in life to celebrate the day in style.     • 2 teaspoons Dijon mustard
    • 1 tablespoon white wine vinegar
    • 8 teaspoons extra virgin olive oil
    • 1/2 teaspoon honey
    • salt and pepper
    • 8 pieces good quality chicken
    • 1 red onion, cut into wedges
    • 1 red pepper, cut into large pieces
    • 1 yellow pepper, cut into large pieces
    • 4 whole garlic cloves
    • 2 tablespoons olive oil
    • salt and freshly ground black pepper

    1. Preheat the oven to 190 C / Gas 5.
    2. Mix together the Dijon mustard, wine vinegar, the 8 teaspoons olive oil, honey, salt and pepper until all elements combine. Add more oil, vinegar or honey to taste. Pour the vinaigrette over the chicken pieces in a roasting tin, and turn to coat.
    3. Roast the chicken in the preheated oven for 25 minutes.
    4. Place onion wedges, pepper pieces and garlic cloves in a bowl and toss with the 2 tablespoons olive oil. Season with salt and black pepper.
    5. Add to roasting pan and continue cooking until chicken is cooked through and crispy-skinned, and vegetables are tender, about 25 minutes more.
    6. Serve in the roasting tin.
