Preheat the oven to 190 C / Gas 5.
Mix together the Dijon mustard, wine vinegar, the 8 teaspoons olive oil, honey, salt and pepper until all elements combine. Add more oil, vinegar or honey to taste. Pour the vinaigrette over the chicken pieces in a roasting tin, and turn to coat.
Roast the chicken in the preheated oven for 25 minutes.
Place onion wedges, pepper pieces and garlic cloves in a bowl and toss with the 2 tablespoons olive oil. Season with salt and black pepper.
Add to roasting pan and continue cooking until chicken is cooked through and crispy-skinned, and vegetables are tender, about 25 minutes more.
