About this recipe:
The simplest dessert. I have an allergy to uncooked apples, so this is my way to use up eating apples.
2 to 3 eating apples, preferably Cox's
80g unsalted butter
2 dessertspoons caster sugar
1 tablespoon Armagnac or brandy
- Core and slice the apples into very thin segments.
- Melt the butter in a large frying pan. When the butter is foaming but not not brown, add the apples. Fry gently until the apples are translucent.
- Add the sugar and stir very, very gently until it is melted and starts to caramelise.
- Add the Armagnac or brandy and stir through. If you like, you can take the pan off the heat and flambe at this stage.
I like this with single cream or creme fraiche.
