    The simplest dessert. I have an allergy to uncooked apples, so this is my way to use up eating apples.

    Serves: 2 

    • 2 to 3 eating apples, preferably Cox's
    • 80g unsalted butter
    • 2 dessertspoons caster sugar
    • 1 tablespoon Armagnac or brandy

    1. Core and slice the apples into very thin segments.
    2. Melt the butter in a large frying pan. When the butter is foaming but not not brown, add the apples. Fry gently until the apples are translucent.
    3. Add the sugar and stir very, very gently until it is melted and starts to caramelise.
    4. Add the Armagnac or brandy and stir through. If you like, you can take the pan off the heat and flambe at this stage.
    5. Serve!


    I like this with single cream or creme fraiche.
