Berry snow

    A very light and airy mousse inspired by the first recipe I ever made at school, called apple snow. This can also be made with melted down Easter chocolate, marbled through before setting.

    Ingredients
    Serves: 4 

    • 2 egg whites
    • 250g double cream
    • 150g berry fruits, lightly coooked and pureed

    Method
    Prep:10min  ›  Extra time:30min chilling  ›  Ready in:40min 

    1. Whisk egg whites stiffly until standing up in peaks.
    2. In separate large bowl, softly whip cream.
    3. Add fruits and egg whites to cream and gently fold with metal spoon.
    4. Put bowl into fridge and chill for 30 minutes before serving.
