Farmhouse vegetable soup

    What's better at lunch than a fresh soup? This vegetable soup takes little effort, cooks in around an hour and can be reheated. It's the perfect soup to take into work as it keeps in the fridge for 2 - 3 days.

    Serves: 4 

    • 1 tablespoon oil
    • 1 onion, chopped
    • 1 leek, sliced
    • 2 potatoes, chopped
    • 1L vegetable stock
    • 2 carrots, chopped
    • 1 parsnip, chopped
    • 1 stick celery, chopped
    • salt and pepper

    Prep:15min  ›  Cook:1hr  ›  Extra time:10min chilling  ›  Ready in:1hr25min 

    1. Add the oil to a big pot, put on a high heat. Throw in the onion and leek and stir-fry for 2 minutes.
    2. Reduce the heat and add in the potatoes. Pop the lid on and leave for around 5 minutes, stirring every minute or so.
    3. Pour in the vegetable stock and add the rest of the vegetables. Bring to the boil and then reduce to simmer.
    4. Check the soup every few minutes. After around 30 to 40 minutes season with salt and pepper and take off the heat.
    5. Allow to cool for a bit and then blend until you get a nice smooth consistency.


    Depending on how you like your soup you can adjust simmering time. Longer for a thicker soup, shorter for a thinner soup :)

    Easy and quick to make. Everybody wanted some in the office yesterday  -  02 May 2011


    Delicious. I made this in my soup maker and added a little garlic and some mixed herbs. The soup turned out a little thick for me but I added some more water then re-heated it.  -  14 Jan 2018


    This was very easy to make but I think I left it to simmer too long at the suggested 30 mins as the consistency was a little too thick for my taste and I had to add some further vegetable stock to thin it out a bit. Other than that the taste is very nice and I will make this again. EDIT: I had this reheated for lunch today and it tasted even better so have upped my star rating to five.  -  04 Jan 2017
