What's better at lunch than a fresh soup? This vegetable soup takes little effort, cooks in around an hour and can be reheated. It's the perfect soup to take into work as it keeps in the fridge for 2 - 3 days.
Depending on how you like your soup you can adjust simmering time. Longer for a thicker soup, shorter for a thinner soup :)

Delicious. I made this in my soup maker and added a little garlic and some mixed herbs. The soup turned out a little thick for me but I added some more water then re-heated it. - 14 Jan 2018
This was very easy to make but I think I left it to simmer too long at the suggested 30 mins as the consistency was a little too thick for my taste and I had to add some further vegetable stock to thin it out a bit. Other than that the taste is very nice and I will make this again. EDIT: I had this reheated for lunch today and it tasted even better so have upped my star rating to five. - 04 Jan 2017
