Homemade Chocolate Cake

    Very adaptable chocolate cake recipe - it is made without eggs and it still comes out! This cake is a quick and easy fix for birthdays, parties or school fetes.

    Serves: 4 

    • 170g cooking margarine
    • 300g sugar
    • 2 eggs
    • 110ml milk
    • 250g plain flour
    • 8 tablespoons unsweetened cocoa
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 1 drop vanilla extract
    • 1 drop almond extract
    • 225ml boiling water

    Prep:20min  ›  Cook:30min  ›  Extra time:10min cooling  ›  Ready in:1hr 

    1. Blend all ingredients, last of all adding 225ml boiling water.
    2. Pour cake mixture into 2 greased and lightly floured cake tins.
    3. Bake at 180 C / Gas 4 until a skewer inserted in centre of cake comes out clean (approximately 30 minutes).
    4. Cool for 10 minutes on a wire rack, then add strawberry jam to one half and Nutella or chocolate spread to the other half and put the cake together. Decorate as you like.

    Take care - this comes up in a search for eggless cakes but has 2 eggs listed - you'll need to use egg substitute.  -  23 Jun 2012


    Tried the recipe for my first time in ages and the cake turned out fine. Probably only needs 25 mins cooking time though, due to fan assisted oven.  -  24 Mar 2012
