Liam's Mediterranean vegetable pasta

    Ok again this is my Mum's profile. I really should make my own, but I owe her so much for my cooking knowledge, so this one's for her :). I coined this from my girlfriend. Her mum used to make this using a flavour sachet, so I decided to try and make my own. I can safely say it's been successful ever since my first attempt.

    Serves: 2 

    • 100g fusilli or penne pasta
    • For the veg
    • 2 carrots, diced
    • 1 onion, chopped
    • garlic cloves, crushed
    • 4 chestnut mushrooms, chopped finely
    • 1 red, green or yellow pepper, sliced or chopped
    • 7 asparagus sprigs
    • For the seasoning
    • 1/4 teaspoon salt
    • 1/2 teaspoon garlic powder
    • 3/4 teaspoon ground black pepper
    • 1 teaspoon dried basil
    • 1 teaspoon dried parsley
    • 1/2 teaspoon paprika
    • 1 teaspoon dark brown soft sugar

    1. Bring a large pan of salted water to the boil, and cook the pasta until tender with a bite at the centre, about 10 minutes.
    2. Fry the carrots and onions on a low heat. Add the garlic, mushrooms and peppers and snap the asparagus into the pan in small pieces.
    3. Whilst the pasta and veg is cooking, add the seasoning ingredients into a pestle and mortar and grind to a rough powder.
    4. Once the pasta is done, drain and mix it with the veg. Sprinkle the seasoning over the lot and cook for another 5 minutes or so, then serve.


    You can use any veg you like, really. I usually use asparagus or peppers. I am yet to try them together. Courgettes and tomatoes would be just as good too.
