Mediterranean rice with mackerel

    This is a recipe for a light dinner in the summer evenings. It is quite easy to prepare and very nutritious. Whenever you are not fond of fish, you could use boiled ham instead.

    Serves: 4 

    • 400g rice
    • 200g pitted black olives, chopped
    • 1 onion, chopped
    • 2 carrots, chopped
    • olive oil
    • 500g canned mackerel
    • Italian herbs, like basil, oregano and majoram

    1. Boil some water for the rice. Pour the rice into the water when it boils.
    2. Fry the olives, onion and carrots in olive oil in a cooking pan or wok. Do not fry vegetables too long, but make sure that the vegetables are fried al dente.
    3. When the rice has been cooked, drain the rice. Then put the rice back in the pan.
    4. When the vegetables are fried, you can add the mackerel in pieces to the vegetables. Stir the mackerel through the vegetables and add some Italian herbs. Also you can use some salt and pepper.
    5. Finally add the vegetables with mackerel to the rice and stir it well.


    When you buy mackerel canned in oil, you can use that oil to fry the vegetables.


    Also you can add some sunflower seeds and or some pumpkin to the dish. Use them with the other vegetables.


    Whenever you are not fond of fish, you could use boiled ham instead.
