About this recipe: This is a simple and easy roast guinea fowl recipe. You can easily halve the recipe to serve two. Roast guinea fowl makes a lovely Sunday lunch alternative.

Serves: 4 

  • 2 whole guinea fowl
  • salt and freshly ground black pepper to taste
  • 6 fresh rosemary or thyme sprigs
  • 6 cloves garlic, peeled
  • 1 onion, halved

  1. Preheat the oven to 180 C / Gas mark 4.
  2. Rub inside and outside of each guinea fowl with salt and pepper to taste. Stuff each guinea fowl with half an onion, 3 garlic cloves and 3 rosemary or thyme sprigs.
  3. Place in a roasting tin and roast in the preheated oven for approximately 1 hour, or until guinea fowl are cooked through and juices run clear near the thigh. Cooking time will vary depending on the size of the guinea fowl.
