Chicken samba cocktail

    This is an amuse which is fresh and spicy. A good appetizer! It consists of chicken, mandarin and a samba sauce. You can serve it in cocktail or in brandy glasses before you actually sit at the table. Then it is more like a ‘welcome snack’.

    Serves: 4 

    • 1 chicken leg
    • 2 mandarins
    • 100ml mayonnaise
    • 100ml ketchup
    • 30ml chili sauce
    • 1 teaspoon brandy
    • fresh chives

    1. Boil the chicken leg in water. Cook it until the meat falls of the bone.
    2. In the meanwhile you can peel the mandarins. Then strip the fleece off the mandarin parts. Do this carefully because the flesh of the fruit has to stay intact.
    3. Mix the mayonnaise, ketchup, chili sauce and a spoon of brandy until the sauce has a pink color. This is the samba sauce.
    4. When the chicken has been cooked, you can separate the flesh from the bones.
    5. Put the flesh in the cocktail glasses and put the mandarin parts on top of that. Then pour the samba sauce over it. As a final touch, put in every glass two tubes of chives.
    6. Serve each glass with a spoon in it.


    You can buy the samba sauce in a supermarket instead of making it yourself.
