About this recipe:Thai flavours make these turkey burgers absolutely delicious. Serve on warmed baps with sweet chilli sauce and coconut mint mayonnaise.
225g (8 oz) mayonnaise
4 tablespoons desiccated coconut, finely chopped
small handful chopped fresh mint
1kg (2 1/4 lb) minced turkey
250g (9 oz) breadcrumbs
100ml (4 fl oz) Thai peanut sauce
2 tablespoons red curry paste
2 spring onions, minced
2 tablespoons minced fresh parsley
1 dessertspoon soy sauce
3 cloves garlic, minced
1 dessertspoon lemon juice
1 dessertspoon lime juice
1 tablespoon hot sauce, such as Tabasco
8 baps, split and toasted

In a small bowl, mix together mayonnaise, coconut and mint. Cover, and refrigerate for at least 1 hour.
In a large bowl, mix together turkey, breadcrumbs, Thai peanut sauce, curry paste, spring onions, parsley, soy sauce, garlic, lemon juice, lime juice and hot sauce. Be careful not to over-mix. Divide into 8 equal size balls. Flatten into patties about 2.5cm (1 in) thick.
Preheat the barbecue for medium high heat.
Lightly oil the cooking grate. Barbecue burgers for 6 to 8 minutes per side, or until well done. Serve on toasted baps with coconut mint mayonnaise.
Don't have a barbecue? Cook these under the grill. Also, feel free to use minced chicken, if desired.
