Thai-Inspired Turkey Burgers

    Thai flavours make these turkey burgers absolutely delicious. Serve on warmed baps with sweet chilli sauce and coconut mint mayonnaise.

    Ingredients
    Serves: 8 

    • 225g (8 oz) mayonnaise
    • 4 tablespoons desiccated coconut, finely chopped
    • small handful chopped fresh mint
    • 1kg (2 1/4 lb) minced turkey
    • 250g (9 oz) breadcrumbs
    • 100ml (4 fl oz) Thai peanut sauce
    • 2 tablespoons red curry paste
    • 2 spring onions, minced
    • 2 tablespoons minced fresh parsley
    • 1 dessertspoon soy sauce
    • 3 cloves garlic, minced
    • 1 dessertspoon lemon juice
    • 1 dessertspoon lime juice
    • 1 tablespoon hot sauce, such as Tabasco
    • 8 baps, split and toasted

    Method

    1. In a small bowl, mix together mayonnaise, coconut and mint. Cover, and refrigerate for at least 1 hour.
    2. In a large bowl, mix together turkey, breadcrumbs, Thai peanut sauce, curry paste, spring onions, parsley, soy sauce, garlic, lemon juice, lime juice and hot sauce. Be careful not to over-mix. Divide into 8 equal size balls. Flatten into patties about 2.5cm (1 in) thick.
    3. Preheat the barbecue for medium high heat.
    4. Lightly oil the cooking grate. Barbecue burgers for 6 to 8 minutes per side, or until well done. Serve on toasted baps with coconut mint mayonnaise.

    Tip:

    Don't have a barbecue? Cook these under the grill. Also, feel free to use minced chicken, if desired.

    This recipe was fantastic and I highly recommend it. The coconut (barring allergy of course) is a must to cool the heat of the hot sauce and curry paste and the blend of flavors was perfect. What an adventure to find these ingredients, though!
