Orange Glazed Roast Turkey Crown

    My family have opted for a turkey crown instead of a whole roast turkey at Christmas, as it's smaller, more manageable and leaves room for lots of delicious trimmings. This is a turkey crown roasted with a simple orange marmalade glaze that's absolutely delicious!

    • 1 dessertspoon dried sage
    • 1 dessertspoon sea salt
    • 1 teaspoon dried thyme
    • 1 (3kg) turkey crown
    • 60g butter
    • 5 tablespoons fresh orange juice
    • 5 tablespoons orange marmalade
    • 1 dessertspoon honey
    • 1 orange, peeled, sectioned, and cut into bite-size pieces

    1. Preheat the oven to 170 C / Gas 3.
    2. Combine sage, salt, and thyme in a small bowl. Rub half of the sage mixture all over the turkey, then place the turkey in a large roasting tin. Set remaining sage mixture aside.
    3. Bring butter, orange juice, orange marmalade, honey and orange sections to the boil in a saucepan over medium-high heat. Reduce heat and simmer uncovered until thickened, stirring occasionally, 15 to 20 minutes. Stir in the remaining sage mixture. Brush the turkey with the glaze.
    4. Roast the turkey in the preheated oven for 90 minutes to 2 hours, basting every 20 minutes. Check that the turkey crown is done by making sure that the meat is no longer pink at the bone and the juices run clear.
    5. Remove the turkey crown from the oven, cover with aluminium foil and let rest for 15-20 minutes before carving.
