Chocolate and lime cheesecake

    Quick and easy tangy but creamy no bake cheesecake, with a little lime and a chocolate chocolate chip cookie base.

    Serves: 4 

    • 1 pack double chocolate chip cookies
    • 60g butter
    • 250g mascarpone
    • 250g cream cheese
    • 4 tablespoons icing suger
    • 2 limes, zested and juiced

    1. Crush the biscuits either by bashing them or in a food processor if you are lucky enough to have one.
    2. Melt the butter and then combine with the biscuits.
    3. Pack the bottom of a 18cm flan case or individual small cases with the mixture and place in the fridge to cool.
    4. Mix the mascarpone and cream cheeses and beat in the icing sugar until smooth. Add the lime juice to taste and half of the lime zest. Depending on the limes you may not need all the juice.
    5. Spread the mix evenly over the biscuit base and put it back in the fridge till chilled.
    6. To serve, grate dark chocolate and sprinkle a little lime zest over the top.

    This is so easy to make and very delicious. Creamy, not too cheesy. personally i would not put the zest in. its a bit too much. and i decorated with jelly limes. yum yum  -  10 Jan 2013
