About this recipe:
A really nice savoury snack made with spinach, eggs and cheese. They are also great for picnics and lunch boxes.
Makes: 24 squares
280g fresh spinach, rinsed and chopped
120g plain flour
1 teaspoon salt
1 teaspoon baking powder
120g butter, melted
1 onion, finely chopped
225g mozzarella cheese, grated
- Preheat the oven to 190 degrees C /Gas mark 5. Lightly grease a glass baking dish.
- Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat and set aside.
- In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk and butter. Mix in cooked spinach, onion and mozzarella cheese.
- Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a skewer inserted in the centre comes out clean. Cool before serving.
Sounds lovely, must try. I am assuming you drain the spinach? Also approximately how big a dish?

Easy to make & tastes just like quiche without the pastry. For flavour, I think I'll add some garlic and use cheddar next time.

this came out very, very greasy I will try using half the butter next time.
