Spinach squares

    A really nice savoury snack made with spinach, eggs and cheese. They are also great for picnics and lunch boxes.

    Makes: 24 squares

    • 280g fresh spinach, rinsed and chopped
    • 125g plain flour
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 2 eggs
    • 235ml milk
    • 110g butter, melted
    • 1 onion, finely chopped
    • 225g mozzarella cheese, grated

    1. Preheat the oven to 190 degrees C /Gas mark 5. Lightly grease a 20x30cm baking dish.
    2. Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat and set aside.
    3. In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk and butter. Mix in cooked spinach, onion and mozzarella cheese.
    4. Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a skewer inserted in the centre comes out clean. Cool before serving.

    Easy to make & tastes just like quiche without the pastry. For flavour, I think I'll add some garlic and use cheddar next time.  -  26 Jun 2011


    this came out very, very greasy I will try using half the butter next time.  -  26 Feb 2013
