Chocolate fudge brownies

    These brownies always go down well every time I make them. The walnuts are completely optional. You could substitute with a different kind of nut or fruit or leave it out completely :)

    Makes: 8 squares

    • 4 large eggs
    • 450g caster sugar
    • 200g butter
    • 6 tablespoons cocoa powder
    • 200g self-raising flour
    • 100g walnuts, chopped

    1. Preheat the oven to 180 C / Gas 4. Grease a 20cm sandwich tin.
    2. In a large bowl beat the eggs and caster sugar, with an electric mixer, until light and fluffy.
    3. In a small saucepan place butter and cocoa powder on a low heat, stirring until the butter melts and the mixture combines.
    4. Add the chocolate mixture to the eggs and sugar, stir.
    5. Fold in the flour and walnuts. Pour mixture into the sandwich tin, smooth with a palette knife.
    6. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 45 minutes.
    7. Leave brownies to cool in the tin. Once cooled, turn out, cut into squares and serve :)
