Coconut Banana Ice Pops

    5 hours 20 min

After experimenting with different flavours, I loved the texture and taste of this creamy coconut and banana ice pop. Taste the mixture before you freeze it and add more honey to sweeten it.

    Makes: 8

    • 375g Greek yoghurt
    • 2 ripe bananas
    • 125ml milk
    • 125ml coconut milk
    • 3 tablespoons honey, or to taste
    • 60g desiccated coconut

    Prep:20min  ›  Extra time:5hr freezing  ›  Ready in:5hr20min

    1. Place the yoghurt, bananas, milk, coconut milk and honey in a blender. Blend until smooth. Taste to see if it is sweet enough; remember that you want it to be a little sweeter than you like it because when it is cold it will taste less sweet. Stir in desiccated coconut, then re-cover the blender and pulse briefly to combine.
    2. Pour into ice pop moulds (or empty yogurt cartons) and freeze at least 5 hours; overnight is best.
    3. For easy unmoulding, run the frozen moulds under warm water for 10 to 15 seconds before removing the ice pops.
