Pork with rice noodles and sweet chilli sauce

    This is great for kids who are very picky. Belly pork strips diced with fried rice noodles and sweet chilli sauce.

    Serves: 4 

    • 4 strips belly pork
    • 3 tablespoons olive oil or vegetable oil
    • 2 packets fresh rice noodles
    • 1 spring onion (optional)
    • 1 bottle sweet chilli sauce

    1. Slice the belly pork into reasonable sized chunks.
    2. Heat your pan with 3 tablespoons of olive oil or vegetable oil and cook the chunks of belly pork to golden brown, then place them into a bowl.
    3. Cook your rice noodles in the pan until soft but only for a few minutes.
    4. Finely cut your spring onion and arrange the rice noodles on the plates and place the chunks of belly pork on top of the rice noodles.
    5. Pour the sweet chilli sauce over the top of the belly pork, a quarter of the chilli sauce on each of 4 plates, then garnish with the spring onion.
