Moist Coconut Slice with Lime Icing

    Makes: 24 squares

    • For the cake
    • 450g softened butter
    • 500g sugar
    • 1 tablespoon vanilla sugar
    • finely grated zest of 6 limes
    • 6 free-range eggs
    • 500g plain flour
    • 200g coconut flakes
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 3 tablespoons Malibu liqueur (optional)
    • For the lime icing
    • 125g softened butter
    • 400g icing sugar
    • 2 teaspoons vanilla sugar
    • finely grated zest of 4 limes and juice of one lime
    • 200g cream cheese
    • lemon and lime zest to garnish

    1. Preheat the oven to 180 degrees C / gas 4.
    2. Beat the butter, sugar and vanilla sugar together until creamy. Add the grated lime zest and the eggs one at a time.
    3. Mix together the flour, coconut, baking powder and salt and fold it into the batter. Flavour with liqueur if you are using it.
    4. Place baking parchment on the bottom of a baking tin and fill th etin with the cake batter.
    5. Bake in the middle of the oven for around 25 minutes. Let the cake cool while you make the frosting.
    6. For the icing: Beat together the butter, icing sugar, vanilla sugar, grated lime zest, lime juice and cream cheese until creamy.
    7. Spread the frosting on the cake and slice into oblong pieces.
    8. Sprinkle with lemon and lime zest before serving.
