About this recipe: Baking is new to me and I am just loving it. In the past 7 weeks I have baked 4 massive cakes and lots of cupcakes. Oooooo . . . heaps of calories, I know! Started with a basic cake to strawberry cake to coffee walnut cake and the latest being this one - a chocolate cake. Tea cake was yummy, my mum's recipe. I find most of the google recipes restraining, as they have the perfect measurements and I don't own a measuring scale yet, so it's quite a task. So mum's measurements using kitchen cups are perfect.
The best of all was the chocolate cake with chocolate icing and, yes, this icing is so quick and easy and yumminess at its peak, just add 1/2 cup cocoa powder to 1 cup milk and 1 1/2 cups caster sugar and bring it to a quick boil. Remove from the flame and add 1 tablespoon butter and whip it in 20 minutes when it cools a bit. I found this recipe on google and it surely did wonders. The taste reached to a complete new level. I have to have a piece of cake RIGHT NOW.
For those who do use a kitchen scale, here are the equivalent measures:
400g caster sugar
113g butter, melted
360ml vegetable oil
1 teaspoon baking powder
4 drops vanilla extract
1 tablespoon cocoa powder
120ml Pepsi or Coke
384g plain flour, sieved.
Mine didn't look like the picture but tasted good, i used cherry cola in mine, would of been nice for a few more instructions like what size tin, as i used one that was to small for the mix and had to quickly make some fairy cakes with the left over. - 01 Aug 2011
