Strawberries in Pimm's

    What says summer more than fresh, juicy, local strawberries doused in Pimm's? Serve this with ice cream, on top of meringues with cream, or use in your favourite trifle or Eton mess recipe.

    Serves: 10 

    • 1kg fresh strawberries, hulled and sliced
    • 4 tablespoons caster sugar
    • 120ml Pimm's No 1 Cup
    • fresh mint leaves to garnish (optional)

    1. Place the strawberries in a large bowl. Sprinkle the sugar evenly over the strawberries, and stir to evenly coat all of the fruit. Let stand at room temperature for 15 minutes, stirring occasionally.
    2. Add the Pimm's, and stir once more. Let stand for another 30 minutes at room temperature. Garnish with mint leaves, if desired.
