    About this recipe: This stuffed mushroom recipe goes really well with avocado and Ainsley Harriet's Spice Sensation couscous, the flavours are delicious.

    Serves: 3 

    • 6 large flat mushrooms
    • 125g mozzarella cheese
    • 270g mature Cheddar cheese
    • 1 garlic clove
    • 1 level teaspoon English mustard
    • 1 pinch black pepper
    • 1 white onion

    1. Prepare the mushrooms, clean them and cut off the stalks, place on a baking tray (bottom side up).
    2. Grate the mozzarella, Cheddar and garlic into a bowl, mix together adding the pepper and mustard. Finely chop the onion and add this to the cheese mixture.
    3. Squeeze together balls of the mixture and place on the top of the prepared mushrooms and pat down slightly.
    4. Place in a pre-heated 200 C / Gas 6 oven for approximately 15 minutes.

    Serving suggestion

    Serve with sliced avocado and Ainsley Harriet's Spice Sensation couscous.
