Italian green bean salad

A very classic and very simple green bean salad, made the Italian way. Wonderful to enjoy when green beans are in season. You can boil the beans well in advance, but don't dress the salad until just before serving, otherwise the vinegar will alter the gorgeous green colour of the beans!

- 500g fine green beans, trimmed
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- freshly ground black pepper and sea salt, to taste
- 3 garlic cloves, chopped (optional)

- Immerse the trimmed green beans in a large pan of boiling salted water. Bring back to the boil and boil for about 5 minutes, until the beans are tender but still crisp.
- Meanwhile, prepare a bowl of ice water. Once the beans are done boiling, drain them and plunge them in the bowl of ice water to stop any further cooking. Leave the beans in the water for a few minutes, then place in a colander to air dry.
- Once the beans are relatively dry, toss them in a serving bowl with the olive oil, vinegar, black pepper, salt and garlic, if using. Serve straightaway!
