About this recipe:This is really nice summer dessert with a difference - I usually make it when fresh pineapples are on offer in the supermarkets! You simply dip the slices in coconut milk, then cinnamon sugar before cooking them under the grill or on the bbq to crisp up the edges. Serve warm with vanilla ice cream.
Makes: 8 pineapple rings
1 fresh pineapple - peeled, cored and cut into rings
60ml coconut milk
100g caster sugar mixed with 1 tablespoon cinnamon

Preheat bbq or oven grill.
Place the coconut milk and cinnamon-sugar mixture into separate dishes. Dip slices of pineapple into coconut milk, then coat in cinnamon sugar.
Cook on bbq grate or under the grill on a baking tray for 5 or 6 minutes on each side. Serve alone or with vanilla ice cream.
