Warm Pineapple Rings

    This is really nice summer dessert with a difference - I usually make it when fresh pineapples are on offer in the supermarkets! You simply dip the slices in coconut milk, then cinnamon sugar before cooking them under the grill or on the bbq to crisp up the edges. Serve warm with vanilla ice cream.

    Makes: 8 pineapple rings

    • 1 fresh pineapple - peeled, cored and cut into rings
    • 60ml coconut milk
    • 100g caster sugar mixed with 1 tablespoon cinnamon

    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Preheat bbq or oven grill.
    2. Place the coconut milk and cinnamon-sugar mixture into separate dishes. Dip slices of pineapple into coconut milk, then coat in cinnamon sugar.
    3. Cook on bbq grate or under the grill on a baking tray for 5 or 6 minutes on each side. Serve alone or with vanilla ice cream.

    Quick and easy pud. Great "five a day" recipe.  -  22 Jun 2012


    This was a huge hit at my family BBQ. It was so easy. There is one recommendation I'd make, not about ingredients or taste, but about the process. The cinnamon sugar got very goopy quickly because of the wetness of the coconut milk.     As with the other reviews, this is a great recipe! To add to this, the best idea is to lightly toast coconut flakes in the oven, then sprinkle them on the pineapple towards the end of grilling. Perfect addition!  -  23 Apr 2007  (Review from Allrecipes US | Canada)
