Simple slow cooker beef and tomato stew

    A friend of mine gave me a slow cooker and I was so keen to it try it out that I basically just browned off some cubes of stewing steak, added them to the slow cooker with a diced onion and poured over a few tins of chopped tomatoes. Six hours later, we sat down to the most tender beef stew I've eaten in a long time! See my tip for leftovers (if you have any)!

    Serves: 8 

    • 1 tablespoon vegetable or olive oil
    • 1 kg beef stewing steak, cubed
    • 1 large onion, diced
    • 2 (400g) tins chopped tomatoes
    • salt and pepper, to taste

    1. In a large frying pan, heat the oil and fry the beef in batches (just to brown it). Spoon each batch into the slow cooker pot.
    2. Fry the onion for a minute or two to brown. Add to beef in slow cooker and pour over tinned tomatoes.
    3. Mix well, set the slow cooker to high for 6 hours. Season with salt and pepper.
    4. Serve with baked potatoes or mash.

    Add beans or other vegetables to bulk it up.

    Add fresh thyme or basil leaves at the end of cooking.

    Use for leftovers

    If it's too much for one dinner, you can make a pie using any leftovers: Place in a casserole dish, cover with mashed potatoes and some grated cheese and reheat in the oven for 20 to 30 minutes.

    Had some brisket I didn't know what to do with and a crowd of people for dinner. I followed the recipe exactly but, as I had 2 kg thickly sliced brisket, I used three tins of tomatoes and doubled the onions.
