Baked sea bream

About this recipe: A lovely way to enjoy a whole fish, baked to perfection with white wine and herbs. You could also use this easy recipe for a whole red snapper or sea bass. Ask your fishmonger to clean the fish for you.

Ingredients

Serves: 4 

  • 1 whole sea bream, cleaned (about 2kg)
  • salt and pepper to taste
  • 1 handful chopped fresh parsley
  • 1 tablespoon dried oregano
  • 1 red onion, thinly sliced
  • 2 cloves garlic, sliced
  • 225ml white wine
  • 4 tablespoons olive oil

Method

  1. Preheat the oven to 180 C / Gas 4.
  2. Season the sea bream with salt and pepper inside and out. Place in a baking dish.
  3. Mix the parsley, oregano, onion and garlic together, and use a bit of the mixture to stuff the inside of the fish. Scatter the rest over top.
  4. Pour the white wine and olive oil over the whole lot. Bake in the preheated oven for about 30 minutes, or until it flakes easily with a fork. Turn over halfway through baking.

Like lemon?

Serve with lemon wedges or add the juice of a whole lemon to the cooking liquid, if desired, reducing the wine by a few tablespoons.
