About this recipe:
This easy-peasy versatile dish was a hit with my family of 8 growing up, and now my husband can't get enough either! It may not look amazing when it's cooked, but the taste is a guaranteed delight.
1 onion, chopped
500g turkey, lamb or beef mince
1 (30g) packet taco seasoning
1 (430g) tin refried beans
100g Cheddar cheese, grated
100g mild or medium salsa (optional)
100g soured cream (optional)
1 small tomato, chopped
1 (200g) bag plain salted tortilla chips
150g iceberg lettuce, shredded

Brown the chopped onion and mince in a large pan over medium heat. When cooked thoroughly, add the taco seasoning in according to the directions.
Stir in the refried beans, followed by the cheese, salsa, soured cream and tomato.
Serve over a plate of tortilla chips and top with chopped lettuce. Enjoy eating these gourmet nachos with your fingers! Tip
If you do not have tortilla chips on hand, serve in warm burritos instead.
This meal serves four, but if there are leftovers, they can be stored in a covered dish in the refrigerator and warmed up in the microwave before serving again on tortilla chips.
