About this recipe: French bread recipe, which can be used for sticks, crusty rolls, etc. This basic recipe uses a mixture of plain flour and bread flour.

Makes: 10 large rolls

  • 240ml (8 fl oz) French bottled warm water
  • 1 1/2 teaspoons caster sugar
  • 1 tablespoon active dried baking yeast
  • 312g (11oz) bread flour
  • 140g (5oz) plain flour
  • 1 1/2 teaspoons salt

  1. Take the warm water and dissolve 1 teaspoon of the sugar in the water, then add the dried yeast. Whisk the mixture, put aside and cover with a cloth for 30 to 40 minutes.
  2. Put the remainder of the ingredients in a bowl and mix, when the yeast mix is ready, add to mixing bowl and mix till soft and smooth.
  3. Remove from bowl and knead for 5 minutes, then put aside for 20 minutes. After 20 minutes, shape as require and place on a tray.
  4. Cover your bread and keep in a warm place until doubled in size, 30 to 45 minutes.
  5. Preheat the oven to 200 C / Gas 6.
  6. Bake in the preheated oven until golden, about 35 minutes.
