    Here's a Scotch egg, lightened a bit by including low fat sausage, and baked rather than deep fried. Recipe kindly provided by Judy.

    Serves: 1 

    • 1 egg
    • 1 Syn Free® (low fat) sausage

    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat the oven to 180 C / Gas 4. Hard boil the egg.
    2. Skin the sausage. Peel the egg and mould the sausage meat around the egg.
    3. Bake in the preheated oven until sausage is no longer pink at the center, about 40 minutes.

    Serving suggestion

    Roll the Scotch egg in couscous before baking for a crunchy outer crust. For Slimming World followers, this is syn free on EE only.

    These were so easy and I really like that they are not fried. I didn't know what the product was that they wrapped the eggs in so I used chicken breakfast sausage. I made a little nest in my palm and then wrapped the eggs easily. Baking time for me was about 30 minutes. Served with mustard.....and YUM! Thanks for sharing this tasty treat!  -  18 Mar 2015
