Minty yoghurt dip

    A simple dip of yoghurt with mint, spring onions and coriander makes a great low fat starter, served with fresh vegetables. Goes great with Greek souvlaki. This recipe is kindly provided by Judy.

    Makes: 1 Dip

    • 2 spring onions
    • coriander leaves
    • 150g very low fat natural yoghurt
    • 1 tablespoon freshly chopped mint
    • sea salt and black pepper

    1. Finely chop the spring onion and coriander leaves. Mix all the ingredients together.
    2. Chill in the fridge for a few hours.
