    About this recipe: Tasty, Cajun-style one pot dish of chicken, rice and vegetables is baked in the oven. This recipe is kindly provided by Judy.

    Serves: 4 

    • 4 chicken breast fillets, cubed
    • 1 onion, sliced
    • 1 red and yellow pepper, deseeded and sliced
    • 4 garlic cloves, peeled and sliced
    • 1 tablespoon fresh thyme
    • 2 to 3 teaspoons Cajun seasoning
    • 200g (7oz) rice
    • 155g (5 1/2 oz) green beans, halved
    • 1 tablespoon tomato puree
    • 600ml (1pt) chicken stock made with 2 stock cubes

    1. Preheat the oven to 200 C / Gas 6.
    2. Put Frylite® into ovenproof pan and fry chicken until golden.
    3. Add onion, peppers and garlic cook for 5 minutes. Add thyme and Cajun seasoning and cook for 2 minutes.
    4. Add rice and stir to coat, then add beans.
    5. Stir the tomato puree into the stock, and pour over stock mixture. Cover tightly with foil.
    6. Bake until rice is tender, about 1 hour, stirring occasionally.
    7. Allow to stand for few minutes before serving.
