Judy's butternut soup

    Butternut squash soup is so easy to make, so comforting, and the added peppers deepen the gorgeous orange colour. This recipe is kindly provided by Judy.

    Makes: 1 Soup

    • 1 butternut squash
    • 2 peppers, red, orange or yellow
    • 1 onion, chopped
    • 2 vegetable OXO® stock cubes
    • salt and pepper

    1. Peel, deseed and chop the butternut squash.
    2. Grill peppers to remove skin, then deseed and chop.
    3. Put all ingredients into pan with enough water to cover, bring to the boil and simmer for 30 minutes.
    4. Blend and serve.


    Step 3 can also be made in a slow cooker over 4 to 8 hours depending on power.
