Spicy tomato sauce

    I use this to spice up simple dishes, like serving it with chicken breasts and roasted vegetables! The thing about this is that you can add or subtract things you don't like. For example, if you want it really spicy, bump up the Tabasco; if you hate black pepper, leave it out. It should still turn out tasty!

    Serves: 4 

    • 1 dash olive oil
    • 3 garlic cloves, crushed
    • 1 large red onion, finely chopped
    • 1 (400g) tin chopped tomatoes
    • 1 teaspoon capers, plus a little of the vinegar from the jar
    • a few sprigs fresh herbs, such as basil, oregano or parsley
    • 1 dash Tabasco® sauce
    • 1 tablespoon balsamic vinegar
    • 1 pinch dark brown soft sugar
    • black pepper to taste

    1. Heat some olive oil in a frying pan. Add garlic and brown, then add onions and cook until softened.
    2. Add tomatoes, capers, herbs, Tabasco and balsamic vinegar and simmer the mixture for 5 minutes.
    3. Add a little sugar and black pepper and stir. Cook for a further 5 minutes.


    Nice with olives too!
