Chris and Suzie's white fish delight

    Really easy and quick sauce for white fish like panga or hake. It makes the cheapest fillets into a tasty meal for up to four people in nearly no time. Serve with saffron rice or fresh green salad and a nice glass of Spanish red wine.

    Serves: 4 

    • 1 large white onion
    • 1 red pepper
    • 4 garlic cloves, or to taste
    • 6 red chillies, or to taste
    • 400ml coconut milk
    • 2 large white fish fillets

    Prep:10min  ›  Cook:45min  ›  Extra time:5min resting  ›  Ready in:1hr 

    1. Preheat the oven to 180 C / Gas 4.
    2. Finely dice onion, pepper, garlic and chilli.
    3. Add to large mixing bowl and stir in coconut milk with wooden spoon.
    4. Stand at room temperature whilst preparing enough aluminium foil to wrap fish.
    5. Place fish on foil and spoon over mixture to cover, wrap fish and mixture in foil loosely.
    6. Bake in oven for 45 minutes or until fish starts to flake.

    I really wanted to like this recipe but the coconut milk sauce went a kind of cottage cheese texture and the sauce was generally too thin. Didn't taste too bad but won't make again.  -  01 Apr 2014
