About this recipe: I am originally from Germany and love this salad. It's one of those 'homecooking' cravings I have to satisfy, especially in the summer. A hit at every BBQ! Adjust quantity as required!

Serves: 2 

  • 500g new baby potatoes, halved (skin on, but optional)
  • 1 medium onion, finely chopped
  • 1 medium tart sweet apple, peeled and chopped
  • 10 cornichons, chopped
  • 1 tablespoon low fat mayonnaise
  • 1 tablespoon low fat yoghurt
  • 1/2 teaspoon Dijon mustard or German mustard
  • 1/2 bunch fresh parsley, chopped
  • salt and pepper to taste

Prep:15min  ›  Cook:15min  ›  Extra time:15min cooling  ›  Ready in:45min 

  1. Boil the potatoes until tender. If you prefer, you can slice them rather than halve them.
  2. In the meantime, prepare the marinade with the remaining ingredients. Just mix it all together in a bowl.
  3. Add potatoes once they have cooled. Give it a good, but gentle, stir! Guten Appetit!


Potato variety should be soft, almost mashy, and you can also add some fried bacon bits. It's even better the next day, while in the fridge.
